My three-year old said this morning, ‘Mom, I want pancakes.’ (Still working on asking for stuff politely.,,) And I got out the ingredients and supplies when she said, ‘Mom, can I make pancakes with you?’ I can’t say no to a request like that, especially if her suggestion is helping out. In 3 years, I want a six-year old cooking prodigy that can serve me pancakes in the morning. (K, maybe more like in 10 years.) So you’ll notice my assistant in my demo!
The best thing besides BOTH preschooler and baby enjoying fresh pancakes is the question I got the next morning: ‘Mom, can I make pancakes with you again?’ I can’t describe how much joy I felt in this moment of encouraging my daughter’s interest in making food. Most real chefs will probably say you have to mix together your dry ingredients first and then your wet ingredients before mixing them together. I say, when I’m trying to rush out the door in the morning, I don’t care if you are wet or dry- you just have to go in the bowl. Thanks to this chaotic method, I can do these pancakes in like 15 minutes and only a couple of utensils to wash. That’s my idea of an efficient breakfast!
Ingredients
2 tablespoons butter (melted)
1 tbsp sugar
1 teaspoon vanilla extract
1 egg
1 cup milk
1 - 1¼ cup self-raising flour*
2 tbsp sprinkles (more if you feel extra crazy)
*Substitute 1 - 1¼ cup all-purpose flour with 1 tsp baking powder, ½ tsp salt, and ¼ tsp baking soda
Instructions:
Step 1. Put butter in a glass measuring cup and microwave until melted, apprx. 20-25 seconds.
Step 2. Mix in sugar, vanilla extract, egg, and milk.
Step 3. Mix in flour until all incorporated.
Step 4. Add Sprinkles (how much depends on how you feel today!) Let it sit a minute while you figure out how to preheat your pan.
Step 5. Pre-heat pan, skillet, or griddle over medium to medium-high heat. I don’t bother adding butter or oil to the pan. Once the pan is reasonably hot, turn down the heat a tick.
Step 6. Make the test pancake and adjust the heat as necessary. Perfection is golden and delicious.
Step 7. Drop batter onto the hot surface and flip the pancakes over once bubbles start rising to the surface (maybe after 1 or 2 minutes). Cook the second side until golden.
Step 8. Serve warm. Bonus points if you make a Mickey Mouse or flower!!

Fun Mom Goals
This is an easy go-to recipe that I feel better about than breakfast cereals or frozen store-bought waffles. My kids will even eat this without syrup! When I mention we started our day with pancakes, my friends are super impressed and wondering how I did it. The magic is in dumping everything together and the few ingredients that are actually required.

Butter
Sugar
Egg
Self-rising flour
Milk
Vanilla Extract
Sprinkles
Sprinkles - GO BIG or GO HOME
Yeah, you heard me.
Make sure you use big sprinkles!!
Don’t bother using small cookie garnish sprinkles (apparently, these are called “nonpareils” if you wanna be bougie about it.) The color will bleed out quickly in the batter and leave you with a very lame party. Trust and believe! You want the “jimmies.” They won’t let you down.
